Quiet kitchen, careful hands
The chef trained for six years in Osaka before opening here, and the menu reflects that schooling: a short omakase at the counter, a tight rotation of nigiri, and a single ramen perfected over a year. Fish is filleted to order, rice is seasoned by hand, and the dashi runs from morning to closing.
The counter seats eight; book a week ahead for omakase. Tables are walk-in friendly for lunch, and the bar pours single-malt whisky, Junmai sake and a handful of Japanese craft lagers. We keep the room calm so the food can do the talking.

Chef's selection of seasonal nigiri, sashimi, a hot dish and dessert, served piece by piece at the counter.

Tuna, salmon, yellowtail, mackerel, scallop, prawn, eel, omelette and two daily specials on hand-formed shari rice.

Pork-bone broth simmered 16 hours, hand-pulled noodles, chashu pork, marinated egg, spring onion and crisped nori.

Sushi rice topped with eight cuts of sashimi, ikura, tamago and gari ginger — packed for sit-in or takeaway.

A tour from a dry Junmai Daiginjo to a sparkling Nigori, paired with rice crackers and chef's snacks.

Eight seasonal vegetable courses — tempura, tsukemono, braised mushrooms, daikon nimono and a dessert of yuzu sorbet.
